Family recipes highlight a talent for the imaginative.

Passover celebrates liberation,
and that spirit extends to
the kitchen, says cookbook author Judy Bart Kancigor. The Passover
observance, which begins at sundown April 8, includes prohibitions on
most kinds of flour and on using yeast—definite challenges at dessert time.
“But we have the freedom to be creative within the rules of Passover,” she
says. That’s clear in the recipes here, which were selected from among the
dozens in her book.
“Sometimes I think it’s too bad Passover only lasts eight days” she says.

Preheat oven to

°F. Grease a

W ith an electric mixer beat
margarine and sugar on medium
speed until light and fluffy, about

minutes. Add eggyolks and
continue beating until well combined,
scraping bowl as necessary. Add
lemon peel, vanilla, and salt. Reduce
speed to medium-low and add matzo
meal, beatingjust until combined.

Press about two-thirds of the
mixture over the bottom of prepared
pan and bake on the center rack for
20
minutes. Remove from oven and
spread preserves evenly over crust.
Sprinkle walnuts over the preserves
and crumble rem aining matzo meal
m ixture over top. Bake until topping
feels set and begins to turn golden,

minutes. Cool in pan on
w ire rack. Cut into squares to serve.

OBSERVING PASSOVER
Judy Bart Kancigor is the
daughter of a cantor and has
written a book on Jewish cooking
but she doesn’t claim to be an
expert on Passover. “I definitely
would not be that last word,” she
says. She advises observant
people to check with their local
kosher experts for questions on
recipes or ingredients.
